Monkfish with Avocado Mango Salsa

Have you ever heard that Michael Pollan quote, “Eat food. Not too much. Mostly plants.”? This is my mantra for eating. Tonight’s dinner is an awesome example. I bought monkfish at Whole Foods. Monkfish is sometimes called “the poor man’s lobster,” because it has a similar firm texture. My husband did our usual, olive oil, salt and pepper, and cooked it over a medium high flame on our gas grill. I made an avocado mango salsa–just for the 2 of us–with 1/2 an avocado, 1/2 a mango, 1/2 a small red onion, a small jalapeño with the seeds and membranes removed, some lime juice, and salt.

We served the fish with sweet potato, broccoli cooked in a foil packet on the grill in the same manner as the green beans from this post,  padron peppers with olive oil and salt which my husband cooked in a cast iron skillet on the grill, and some cut up raw veggies. The only non-plant based food on the plate was the monkfish. Not the best picture I’ve taken, but it was all delicious!
