Omelet with cheese and veggies

Breakfast this morning was an omelet made with only one egg, some Cotswold cheese, and leftover veggies from last night. It was pretty good, but a milder cheese would have been better. I actually weighed the cheese, that really is the best way to make sure that I am sticking to the correct portion sizes. If there is a doubt, I still weigh and measure my food.
